I’m about to go on a goat cheese and pie binge.
I’ve been trying out different pies to make for the Austin Food Blogger Alliance Pie-Luck, and I’ve seen a TON of great goat cheese recipes lately.
This is a goat cheese recipe.
An amazing appetizer with a kick: fennel pollen.
As you all know, or maybe you don’t, I’m working a little for Savory Spice Shop in Austin this summer, helping out with PR and whatnot. Every month, the shop hosts a cooking class. The last two have featured Chef Ruth Ellsworth Carter, an amazing woman. Seriously, you should look her up.
Chef Ruth made a ton of different cold summer soups and salads, so I’ll be featuring them on here (yay!).
Many of the special ingredients (like fennel pollen). What is fennel pollen, you ask? It’s the pollen that is pulled from the fennel plant when the fronds are blooming their flowers. Fennel pollen is the most potent form of fennel, it’s flavor concentrated into tiny little morsels.
If you love goat cheese, you’ll love this recipe.
Ingredients
4 oranges, seeded and diced
1/4 cup good olive oil
1 head boston or butter lettuce
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 cup (8 oz.) goat cheese
Fennel pollen
Preparation
1. Combine the orange segments and olive oil, salt and pepper. Make cups of boston lettuce and place on a platter.
2. Fill the lettuce cups with orange pieces.
3. Roll the goat cheese into small balls, and place one on top of the oranges in each lettuce cup.
4. Sprinkle a little fennel pollen on each one. Enjoy!
